has recently experienced a makeover. Not only has the Palm Court
room decor changed, the menu has experienced a transition. On a
recent visit we sought the Grilled Salmon dish with the crusted
exterior in a slightly sweet, mellow flavor that sears in the
juice and texture. It wasn't there. What we found was a Pan
Seared Halibut with Wild Mushroom Risotto & Sugar Snap Peas or a Cedar Plank Roasted
Salmon with White Bean Ragout, Oven Dried Tomatoes & Aged
Balsamic.
Seeking something light, I ordered a salad of Boston Bibb
Lettuce Wedges with Toasted Almonds & Maytag Blue Cheese
Dressing, shown above. I sought a light meal but was
advised that though the Sauteed Shrimp Scampi with Garlic,
Lemon and Tomato ($14) was superb, it might not be enough if
you haven't eaten all day. I asked the chef to add a shrimp
or two in a customized dish made just for me and the results
are seen above in the top photo. We will not quote a price
because it was a special order that you would need to
discuss with your chef or food server, if available.
Heavenly shrimp were served with a sauce you couldn't help
but take olive bread and dip into to savor each flavorful
bite. Again, the Hilton Waterfront Resort kitchen knows
exactly how to prepare fish, offering quick heat to the
outside sealing in the flavors and juices, while providing a
delightful texture to each morsel.
For gourmet food that offers flavor, complex combinations of
spices make you yearn for more, even though you are full,
you need to treat yourself to the elegantly casual dining
room or patio of the new Palm Court.
Other menu items include New York Steak Aged and Seasoned
with the perfect blend of Sea Salt and Herb Oil, Filet
Mignon, Snake River Farm Pork Chop, Colorado
Lamb Chop and Beef Ribeye. All steaks are
available grilled, or cast iron seared to seal in the
juices. They are served with Cabernet Sauce and a choice of
one side dish such as Prosciutto Wrapped Asparagus, Whipped
Potatoes, Gratin Potatoes with Caramelized Onions, Onion
Strings, Wild Rice Pilaf with Mushrooms Scallions & Dried
Fruit, Caramelized Sweet Creamed Corn, Fine Green Beans with
Shallots or Sauteed Forest Mushrooms.
Deserts include a rich chocolate cake and the ever famous
Creme Brulee.

The Waterfront Hilton in Huntington Beach has renovated The
Palm Court restaurant into what is now one of Orange
County's finest seaside California steakhouses. The
restaurant's new designer d'or and Chef Jeff Littlefield's
menu of unpretentious, high quality foods mirrors the

The wine list, created by Director of Restaurants and
Sommelier Herv'Levy, offers a selection of moderately
priced wines by the glass or full bottle. Whether sitting

Ocean. The always popular Champagne Brunch is available
